Hello friends! After my post yesterday about the "epic failure" cupcakes I made, I went online to research what I could have done wrong. It just wasn't sitting well with me that using buttermilk in the place of whole milk could have made that much of a difference because I do it all the time! Turns out it wasn't me that messed up after all. What happened is I found a Martha Stewart video online where she and some New York bakery owner were making his fabulous cupcakes on the show. I followed along and wrote down all the ingredients and measurements that they said on camera. Turns out that the recipe on the show (on camera) was flawed....yeah, Martha and her guest screwed up! They were so busy chit-chattin' that they forgot to mention the addition of a key ingredient AND goofed on the amount of another key ingredient. The bakery guy emphasized on-air to add two tablespoons of baking powder when most recipes call for one tablespoon or less. You would think this guy would know what he was doing. Considered writing Martha a letter and asking for reimbursement of my expenses but that will get me nowhere. Anyhow, I found the correct recipe and made them again this morning and they came out wonderful, so moist and tasty!
Side note: Oh, and I didn't use whole milk as "bakery guy" insisted, I used soy milk instead because I was out of buttermilk and didn't want to run to the store.
Second update. The hi-hat cupcakes I made yesterday came out looking beautiful however, when I ate one last night I found the meringue frosting under the chocolate to be WAY to grainy. It tasted good but was too sweet and I felt like I was chewing sand, so those adorable little guys went to the trash.
Side note: The meringue frosting was another recipe I got from Martha....seeing a pattern here?
Anyway, I found another meringue recipe, Italian meringue, it is SO smooth and not too sweet. Leave it to the Italians, ehh!
So, my lesson learned is that although Martha is great she is not ALL that and a bag of Cheetos!!
